1 package large flour tortillas

Cooking spray

1 box elbow macaroni with ridges or cavatappi pasta (hollow corkscrews with ridges)

1 tablespoon EVOO (extra-virgin olive oil)

2 pounds ground beef

1 medium onion, finely chopped

6 garlic cloves, finely chopped

4 jalapeño peppers, finely chopped

3 tablespoons tomato paste

2 tablespoons chili powder

1 tablespoon ground coriander

1 tablespoon ground cumin

1 bottle of beer or 1½ cups chicken stock

3 tablespoons butter

3 tablespoons all-purpose flour

2½ cups milk

3 cups shredded sharp yellow cheddar cheese

1 (14.5-ounce) can chopped tomatoes with chiles, drained

Black pepper

2 (14-ounce) cans vegetarian spicy refried beans

5 to 6 plum tomatoes, seeded and diced

1 small red onion, finely chopped

¼ cup fresh cilantro leaves, finely chopped

2 limes

2 ripe Hass avocados

1 cup sour cream

Juice of 1 lemon

Hot sauce

½ head of iceberg lettuce, shredded

½ cup chopped olives with pimientos

1 small bunch of scallions, chopped, whites and greens

You can feed an army … a brigade at the least … with this dish.
